Beef Pho Nam Dinh is not just a dish but a symbol of the rich cultural and culinary heritage of Thành Nam. On August 9, 2024, Nam Dinh Pho was officially recognized as a National Intangible Cultural Heritage by the Ministry of Culture, Sports, and Tourism, affirming its significant role in Vietnamese cuisine (Government News).

Origins and Development

Pho has long been an integral part of urban life in Vietnam, particularly in cities such as Hanoi, Hai Phong, and Nam Dinh. The tradition of pho-making became well-known through the street vendors of Vân Cù, Giao Cù, Tây Lạc (Đồng Sơn Commune, Nam Trực District)—villages renowned for their deep-rooted pho-making heritage. These vendors carried their pho across town, spreading the unique flavors of this dish.

According to records, Nam Định province is home to nearly 500 pho restaurants spread across its 10 districts and cities. More notably, around 1,500 families from Vân Cù (Đồng Sơn Commune), Phúc Thọ, and Thạch Bi (Nam Thái Commune, Nam Trực District) have opened pho shops in major cities such as Hanoi, Hai Phong, and Ho Chi Minh City, demonstrating the widespread influence of Nam Định pho (Nam Định Museum).

Nam Định pho is famous for its clear yet flavorful broth, infused with the aroma of ginger, cardamom, cinnamon, star anise, and fresh scallions. The noodles are soft yet chewy, retaining their texture even after being soaked in broth. The beef is fresh, tender, and perfectly complements the broth, creating a harmonious blend of flavors. Each bowl of pho is a carefully crafted balance of traditional ingredients and secret family recipes, making it an essential part of Vietnamese cuisine.

Nam Định takes pride in its long-standing pho establishments, each offering its own signature taste:

The official recognition of Nam Định pho as a National Intangible Cultural Heritage highlights its culinary value and paves the way for it to be nominated for UNESCO's Representative List of Intangible Cultural Heritage of Humanity (Nam Định News).

The Pho Nam Dinh Network is our initiative to forge meaningful connections between our global operations and our hometown in Vietnam. As Phở Cồ grows, we believe it's essential to give back to the place where our culinary traditions were born.

Nam Định province is not only the birthplace of phở, but it's also home to generations of skilled culinary artisans who have preserved the authentic techniques and flavors that make this dish special. By building bridges between Nam Định and the world, we aim to both honor these traditions and create new opportunities for our hometown community.

Working directly with Nam Định producers to bring authentic ingredients to our Tokyo restaurant, creating sustainable income opportunities in our hometown.

Culinary Exchange

Bringing talented cooks from Nam Định to Tokyo for training exchanges, allowing knowledge to flow both ways and preserving traditional techniques.

Reinvestment

Dedicating a percentage of Phở Cồ's profits to culinary education and infrastructure in Nam Định, including training programs for young chefs.

Documentation

Creating a digital archive of Nam Định phở traditions, recording techniques and stories from elder phở masters before they're lost to time.

Network Development Timeline

Phase 1: Research & Planning (2025-2026)
